TUTTI-FRUITY CAKE

INGREDIENTS
1 1/2 cup all-purpose flour
1/2 cup softened butter or oil (I used canola oil)
1/2 cup tutti-fruity with raisins
1 cup powdered sugar
1 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla essence
1/4 cup milk
3 large eggs

METHOD
Coat tutti-fruity in 2 tbsp flour and keep aside. This process will not let tutti-fruity sink down.

Sieve together flour, baking soda and baking powder. Keep aside.


Beat sugar, vanilla essence and oil till combined well. Add egg one at a time and beat well. Add sifted flour in 3-4 batches mixing meanwhile. Add milk and mix well. Add flour coated tutti-fruity.


Mix well. Grease a loaf pan with butter or place parchment paper and pour in the batter.

Bake it at 180 degree Celsius for 30-35 minutes or till skewer comes out clean. Time may vary depending on the type of oven.

Slice and serve.
