ORANGE CUP CAKE

INGREDIENTS
2 cups whole wheat flour (Atta)
1 cup sugar
1/2 cup butter
1/2 cup orange marmalade or orange jam
2 eggs
1/2 tsp baking soda
1/2 tsp baking powder
1/4 cup milk

FOR ICING:
1/2 cup icing sugar
2 tbsp butter(salted or unsalted) I used salted Amul butter
1 tbsp orange marmalade

Related recipe: vanilla cupcake with Nutella frosting

METHOD

Transfer 1 cup orange marmalade in a bowl and take out its flake and keep aside for garnishing, if you don't want to use for garnishing you can enjoy inside the cake.

Sift flour, baking powder and baking sugar together and keep aside.

In other bowl, beat together sugar, eggs and butter, till all the ingredients are mixed well. Add marmalade in it and mix well again.

Add this in flour in 2-3 batches and mix it well. Now add milk to make smooth batter.

The batter will be little thick. Transfer in mould and bake in pre-heated oven at 180 degree Celsius for 20-22 minutes or till the skewer comes out to be clean.

Let it cool down completely.

For icing:
Sift icing sugar, add butter and mix well till it becomes smooth and creamy. It will take around 5-8 minutes.

Mix marmalade well to make it smooth, make sure to remove the orange flakes or it will stuck in your piping bag while icing the cake.

Add marmalade in it and mix again well till it becomes smooth and creamy.

I am sorry I skipped to get the final picture of icing.

The icing should be little thick. Keep it in fridge for 5 minutes so that it butter becomes little solid.

Cakes should be completely cool or this icing will melt. Put the icing all over and garnish with orange flakes.

Put this icing at the time of serving or keep in fridge if not consuming immediately or it will melt due to butter in it.

Garnish with flakes and serve.

IF YOU ARE USING (ALL-PURPOSE FLOUR I.E MAIDA, THE QUANTITY OF MILK WILL BE LESS, SO ADD MILK LITTLE BY LITTLE)
