INGREDIENTS
1 cup oats
1 medium sized chopped onion
2-3 boiled and mashed potatoes
1/2 cup boiled peas (optional)
salt and chilli flakes to taste
1 tsp coriander powder
1 tsp oregano
4-5 tbsp tomato sauce
6-8 bread slices
SERVES:7-8 sandwiches
Oats are very beneficial for health as we all know. I make many recipes with oats. One of my kids favourite is this sandwich. The best part of this sandwich is that it is difficult to make out the oats inside. Yes, you heard my right, it's difficult to make out oats stuffed inside.
Many of you might not want to try fearing oats will come in mouth and kids will not eat, but to believe me you need to try it.
Make sure oats doesn’t turn brown or it will become hard and will take time to become soft.
You can add any vegetable of your choice with Potato, like finely chopped carrot, capsicum, corn.
Before putting filling in bread take taste test so that you can adjust spices before serving.
METHOD
Dry roast oats till fragrant, don't let them turn brown. Keep aside.
In same pan, heat some oil saute onions till transparent. Add all the spices. Now add boiled potatoes. Mix it well. Add boiled and roughly mashed peas with roasted oats.
Saute on low flame for 5-10 minutes or till oats become soft. If the mixture is too dry add some water (nearly 2-3 tbsp).
Let mixture come down to room temperature.
Take bread slices, cut the edges. Put tomato sauce on bread. Put this mixture generously. Cover with other slice.
Heat some oil on grilled or normal pan, keep the slices on pan, roast on high flame, by pressing it with the help of spatula till it becomes crisp.
Cut in triangular shape and pack in your kids tiffin or serve in breakfast.
