ONE-POT POTATO EGG / POTATO EGG / ARABIC STYLE EGG

INGREDIENTS 
1 medium sized sliced triangular potato
1 medium sized sliced onion
1 medium sized sliced tomato
4-5 eggs
salt, red chilli and black pepper to taste
freshly chopped coriander leaves.


METHOD
Dice potato thinly in triangular shape. slice onion and tomato.

Drizzle some oil in non-stick pan, add potato, saute for 1-2 minutes, till it become little soft, don't cook completely at this stage, add sliced onions and saute till golden in colour, you will see potato also becoming more brown and soft. Add sliced tomatoes. Mix well. Let it cook for 2-3 minutes till tomatoes becomes soft and tender.


Add salt, pepper and red chilli according to your taste. Add some freshly chopped coriander leaves.

Now make 3-4 wells in the center of masala, as shown in pic 5. Break one egg at a time in the well as shown in pic below, sprinkle little salt and pepper over eggs and some more freshly chopped coriander leaves.

Cover and cook for 1-2 minute, till yellow part is half cooked, if you don't like liquidy yellow cook for more 1 minute.

Serve and enjoy hot!
