QUICK CHICKEN SAUSAGE SANDWICH / CHICKEN SANDWICH

Serves: 10-15 sandwiches

INGREDIENTS
10-12 chicken sausages
1 cup homemade egg-less mayonnaise
1 medium sized chopped onion
1 bell pepper or capsicum chopped (optional)
1 tsp mixed herb or oregano
1 tsp powder sugar
1 tsp garlic powder (optional)
1/2 cup grated processed cheese (optional)
salt and chilli to taste
10-12 bread slices
1/2 cup softened butter

METHOD

Keep butter outside the fridge to let it come down to room temperature.

Take sausages and chop them finely like onions. Keep aside. Make instant egg-less mayonnaise or take store brought mayonnaise. Add salt, sugar and mix well. Be careful while adding salt if you are using flavoured sausages. Add all the ingredients except for butter and bread slices. Mix well, your filling is ready.

Take bread slices and trim the edges.

Put filling on one bread, cover with other slice. Spread softened butter on one slice and toast on grill or any non-stick pan. Press it hard with spatula to make it crisp and brown. Turn and spread butter on the other side. Press it hard with spatula and toast till crisp and brown.

Slice into half and serve or pack in kids tiffin.

NOTES:
This time I did not add capsicum, try not to skip, it add on to great flavour and taste.
