SEMOLINA / SUJI VEG BALLS

 INGREDIENTS
1 finely chopped onion
1 large finely chopped carrot
1 finely chopped capsicum
1/4 cup boiled corn
1 cup suji/semolina
1/2 cup water
2 tbsp cornflour
1 cup breadcrumbs
1 tsp oregano
1 tsp dried parsley (optional)
1 tsp chilli flakes
2 tbsp butter
salt and pepper to taste
oil for frying


METHOD
In a pan, melt butter, saute onions till it sweats. Add chopped carrot and cook for some time till half done (don't cook it completely).

Add rest of the vegetables with salt, pepper, oregano, parsley and chilli flakes.

Cook for 5  minutes. Add a cup of semolina, and 1/2 cup water. Cook till water dries up and it becomes like dough.

Turn off the gas and let mixture come down to lukewarm (don't let it become cold)

Grease your palm with oil and make small sized balls with it.

Make medium consistency batter using cornflour and water.

In other plate, mix breadcrumbs and 1 tbsp suji/semolina.

Dip the balls in cornflour batter and roll in breadcrumbs mix - suji mix.

1. Saute onion till it sweats. Add carrot and cook till half done. Don't cook carrots completely.











2. Add rest of the vegetables, oregano, chilli flakes, parsley, salt and pepper. Saute on high flame for about 5 minutes.











3. Put 1 cup semolina.











4. Mix well add 1/2 cup water.











5. Cook till it becomes like a dough. Turn off the flame and let it come down to room temperature.













6. Make ball and dip in cornflour batter, then roll in breadcrumbs and deep fry.

















7. serve hot!
