INGREDIENTS
1 cup mango puree
1 cup fresh cream (I used Amul cream)
1 cup milk
2 tsp gelatin or agar-agar
1/4 cup cold water
1 cup strawberry jelly (Prepare as per the instruction given on the packet)
a pinch of yellow colour (optional)
METHOD
Dissolve gelatin in cold water and let it swell for about 5 to 10 minutes.
In a medium saucepan bring the cream, milk, mango puree and sugar to a simmer over medium-low heat (Do not boil). When sugar has dissolved remove from heat. Let cool for 5 minutes before adding the gelatin.
Add gelatin in the milk mixture and stir until the gelatin has completely dissolved.
Pour it in serving glasses or bowl.
Keep in fridge to set for 3-4 hours.
Prepare strawberry jelly and let it come down to room temperature and pour over set mango panna cotta.
Again keep in fridge to set for about 3-4 hours. serve chilled.
ALWAYS SPRINKLE GELATIN OVER WARM WATER. IT SHOULD BECOME TRANSPARENT.
IF GELATIN IS NOT DISSOLVED PROPERLY, PUDDING WILL NOT SET.

2. In heavy bottomed pan, mix together cream, milk and mango puree.
3. Simmer over medium-low heat until sugar dissolves. Let the mixture cool down.
4. Add gelatin dissolved water.
5. Pour in serving glasses or bowl. Set in fridge for 3-4 hrs.
6. Prepare strawberry jelly. Let it come down to room temperature. (Don't let it cool completely)
7. Pour over set pudding.
8. Again set in fridge for 2-3 hours or in freezer for 1 hour.
9. Serve chilled.
