MANGO PUDDING / EGG-LESS MANGO PUDDING

We all love eating mangoes, specially kids love it to the core. I have written many recipes with mango, which you can find in my blog, here is one more super tasty pudding made with mango. To set mango pudding, gelatin or agar-agar is essential, for those who don't like to use gelatin or agar-agar here is a recipe which is made without using it.

INGREDIENTS
1 cup mango pulp
2 cups milk
1/4 cup sugar (adjust according to your taste level)
1/2 cup condensed milk
1/2 cup white chocolate
1/2 cup cornflour
2 tbsp fresh cream (I used Amul cream)
some fresh fruits and a dollop of cream (optional)


METHOD
Take a heavy bottomed pan, add milk and sugar. Cook milk till sugar melts. Once sugar is completely melted add mango pulp and condensed milk and cook for 3-4 minutes stirring continuously.

Dissolve cornflour in 1/2 cup milk and add in milk-mango mix. Cook and stir continuously till mixture becomes thick.  Once it's thick, turn off the flame and keep aside.

Melt white chocolate on double boiler or in microwave with 2 tbsp cream in it.


Once chocolate is melted add in mango mix. Immediately transfer this mix in serving bowls, once it cools down to room temperature transfer it in serving bowls.

Let it set in fridge for 4-5 hours or overnight. Once it's completely set, garnish with fresh fruits and serve chilled.

NOTES:
1. If white chocolate is not available you can substitute it with 1 tbsp of gelatin dissolved in 1/2 cup water, let it rest, micro for 1 minute and add in prepared pudding, set in serving bowls.

5. Mix white chocolate and cream.










6. Melt completely on double boiler or in microwave. 












7. Add white chocolate in mango mix and stir well. Make sure it's mixed well.










8. Transfer in serving bowls immediately. Let it set for 4-5 hours or overnight in fridge.










9. Garnish with fresh fruits and a dollop of cream










10. I kept this overnight, you can see how nicely it's set.














11. Serve chilled.
