RED AND WHITE SAUCE PASTA

INGREDIENTS
2 cups boiled pasta
4 large or 5 medium sized potatoes
1 large finely chopped onion
1 tsp garlic paste
1 tsp oregano
1 tsp parsley
2 tbsp pasta sauce (I used market made)
2 tbsp tomato sauce or tomato puree
2-3 tbsp white sauce
salt and chilly flakes to taste
Assorted vegetables (I used red and yellow bell pepper, capsicum, broccoli, boiled corn)




Pasta have become kids one of the favourite dishes nowadays. As we all know, pasta can be made in various forms depending on the taste. I have many pasta recipes like : Vegetable Pasta, Cheesy Tangy Pasta, Baked Cheeses Pasta, Red Sauce Pasta.

Many people wrote and asked me how to make thick Red Sauce Pasta. It is easy to make White sauce pasta thick , but many people find it difficult to make red sauce pasta thick and creamy.

This time I did an experiment by adding some white sauce in Red sauce pasta. Believe me it tasted divine. My kids and family simply loved the taste and combination of tangy tomato with thick creamy flavour of white sauce.

Just keep in mind few tips while making any kind of pasta.

1. Whenever you boil pasta, NEVER add oil in it. It will not let your sauce absorb the gravy.

2. Always prepare the gravy / sauce first then boil pasta. Never keep boiled pasta aside for more than 5-10 minutes else it will become dry and absorb more gravy.

3. Always boil pasta in deep pan with plenty of water with salt in it.

4. For making pasta, always use sweet tomatoes which are red and big in size. Small and light coloured tomatoes are sour which can make your pasta too tangy which kids generally don't like.

5. First prepare white sauce and then start with the recipe.

6. White sauce is going to be thick in this recipe.

METHOD
Take some water in deep pan, add tomatoes in it. Boil on high flame till tender and cooked. Let it cool down. Peel the skin and blend in jar.

Heat some oil in pan, add garlic paste or chopped garlic. Add blanched tomato purée. Add all the herbs. Let it simmer for 5 minutes. Start boiling pasta at this stage. Add sugar. When it become thick add pasta sauce, tomato sauce and let it simmer again for 2-3 minutes.

Add white sauce and cook on low flame till it becomes thick. Add chopped vegetables, cook till tender and soft. Don't over cook. Now add boiled pasta. Give it a good stir. If you feel gravy is too thick add some water.

Sprinkle some more herbs and serve.

1. Blanch tomatoes.

6. After 2-3 minutes add White sauce










7. Now goes vegetables. Cook till half done.










8. Boiled pasta. Mix well if required add some water. Turn off the flame and cover for 5 minutes.















9. Sprinkle some more herbs and serve.
