TRI-COLOUR MUFFIN

INGREDIENTS
1/2 cup spinach
2-3 medium sized carrot
1 tin milkmaid or any other condensed milk
1/2 cup softened butter
1/2 tsp baking soda
1/2 tsp baking powder
1 cup whole wheat flour (atta)
1/2 cup wheat flour (maida)
1 tsp vanilla essence
1/2 tsp lemon zest


 

METHOD

Take spinach leaves (remove stems) and grind using as less water as possible and make puree. Keep aside.

Now chop carrot and grind using 1-2 tbsp water. Keep aside.

In a bowl, add condensed milk and butter and mix well till butter dissolve completely. Add vanilla essence and mix well.

Sieve whole wheat flour, all-purpose flour, baking soda and baking powder. Mix this in condensed milk mixture and fold with light hands. Batter will be thick, don't add milk at this stage.

Divide batter in 3 equal parts.

Add carrot puree in one part and spinach puree in other part. If spinach puree is more liquid then strain and add. Mix well.

Add some milk (around 2-3 tbsp) in 3rd part, that is, plain batter to give it right batter consistency.

Grease muffin mold with butter or oil.

First pour, spinach batter, then plain batter and finally carrot batter leaving 1/4 space in mold for batter to rise while baking.

Pre-heat oven at 190°C and bake it for 20 minutes.

Let it come down to room temperature. Slice and enjoy!

BEFORE ADDING PUREES, MAKE SURE BATTER SHOULD BE THICK AS PUREE WILL MAKE IT THIN. (IF IT BECOMES TOO THIN ADD MORE FLOUR)

7. Add in sifted flour, baking soda and baking powder.








8. Add lemon zest. Batter will be thick at this stage, don't add milk.








9. Divide batter in 3 equal parts. In one part add carrot puree.








10. Other part, spinach puree.








11. In plain batter add some milk to make batter of right consistency.







12. Tri-colour batters are ready to go in oven.



13. Grease molds, first put green colour batter, then plain and then orange colour batter. Bake it in oven for 20 minutes in pre-heated oven at 190°C.









14. After 20 minutes.



15. Cut into half and enjoy!
