Many kids hate to have sprouts including mine. In fact, I too don't like sprouts. ;)
So thought of giving it a healthy and tasty version.
Sprouts can be made of green moong dal or chana dal.
Here I am using green moong dal. For making sprouts I soaked dal overnight and then wrapped in muslin cloth, kept in casserole, closed it and kept it for one day for sprouts to grow. It took 7-8 hours.
In winters it will take more time.
Here in recipe, I added besan, some atta, and oats. Adding oats is completely optional. Try not to skip besan as it adds flavour to it. since all my recipes are dedicated to kids, I don't add any kind of chili or pepper.
Depending on the tolerance level of your child or family you can add chili.
Those kids or people who are allergic to gluten can omit atta.
I added spinach in this pancake to give it more healthier option, if you want you can add capsicum, corn or any other boiled vegetable of your or your child's choice.
You can substitute spinach leaves with freshly chopped fenugreek leaves, grated carrot, grated bottle gourd or grated beetroot.
Make sure sprouts are finely grinded to smooth paste as kids will create fuss to have those granules in mouth.
INGREDIENTS:
1 cup Sprouted Moong dal (Green gram split)
2 tbsp Besan (Gram flour)
2 tbsp Atta (whole wheat flour) optional
2 tbsp powdered oats
1 tsp turmeric powder
1 tsp coriander powder
1 tsp kasuri methi
1 tablespoon processed cheese (optional)
1/2 cup finely chopped spinach (optional)
1/2 cup water
1/2 teaspoon oil for cooking
salt to taste
METHOD:
Grind sprouted dal in a grinder. In a bowl, add puree of sprout dal, besan, atta, powdered oats, spinach, coriander powder, kasuri methi, turmeric powder, salt, add water to make a smooth thick paste.
One can add sunflower seeds powder, flaxseeds powder or any vegetables of your choice (grated carrot, grated beetroot or grated bottle gourd).
Heat oil in non stick pan, spread this batter and cook it till it turns golden brown now turn it to other side and cook it little add grated cheese over it and fold it make a roll.
Cut it into small wedges and serve hot with sauce or chutney.

Cook from other side and serve with kids favourite sauce or cheesy dip.
