TAMATAR BHINDI

INGREDIENTS
1/2 kg washed, dried and chopped ladyfinger
2 medium sized washed and chopped tomatoes
2-3 large finely sliced onions
1 tsp garam masala
1 tsp coriander powder
1 dry mango powder (optional)
salt to taste
Oil for shallow fry


METHOD
Wash and dry ladyfinger. Chop it.

Wash and chop tomatoes and keep aside. Preferably in tilted position so that excess water flows down.
Or you can simply squeeze tomatoes with hands to take out the excess water.

Heat oil in pan and roast ladyfinger little at a time till golden in color. Once complete ladyfinger is roasted keep aside and cover it.

Heat 2-3 tbsp oil and saute onions till golden in color. Add roasted ladyfinger in it. Mix well. Add seasonings like salt, garam masala, coriander powder, dry mango powder and salt. Mix well.

Add tomatoes in it. Mix well. Put the flame to high and let it cook for 2-3 minutes stirring occasionally.

Turn off the gas and cover with lid for 4-5 minutes.

Serve hot.
