ALMOND COOKIES

Super healthy cookies made with homemade almond flour and whole wheat flour. 

I prefer to make almond flour at home rather than buying market made pack. Its not only have fresh flavor and taste but turns out to be very economical. 

It's very simple to make almond flour, just soak the nut overnight, next day peel the skin and sun dry it, blend and it's ready.

I gave another crunchy taste and twist to regular almond cookies by filling almond inside. 

Just gently toast the almond in pan till crunchy and keep aside by the time you make dough.

Trust me the nutty surprise inside enhances the taste and texture of these cookies.

 INGREDIENTS
1 cup whole wheat flour
1/2 cup almond powder

1 cup powdered sugar
1/2 cup softened butter
1-2 TSP milk if required
1 TSP almond essence (optional)


METHOD
Take whole almond and toast in pan on low flame for 5 minutes or till it becomes crunchy. Keep aside.

In pan, mix butter and sugar. Whisk until creamy and pale.

Add flour and almond powder.

Mix and combine to get dough. If you find difficult to combine the dough add teaspoon of milk. I didn't use milk.

Rest the dough in fridge for 15-20 minutes by that time pre heat the oven at 170 °C.

Take the dough, make lemon sized balls. Insert toasted almond and give it a round or oval shape, as desired.

Put almond slice of whole almond on top of the cookie.

Place it on greased baking paper and bake at 170°C for 15-20 minutes or till it becomes brown. For me it took 18 minutes.

These cookies take more time to bake as compared to other cookies.

NOTES:
For almond powder, I soaked almonds overnight and sun dried for 30 minutes then powdered.

1. Take almond powder.










2. Beat together sugar and butter till creamy and pale.










3. Add almond powder and whole wheat flour. Add almond extract.










4. Combine all the ingredients to make a soft dough.












5. Make small desired shape ball and put toasted almond.











6. Close, top with some more almond and place in lined baking sheet.














7. Let hot cookies cool down completely. 













8. Both oval and round shape cookies are ready to serve.
