INGREDIENTS
8-10 peeled and finely chopped bitter gourds
1 large or 2 medium sized finely diced potatoes
1 large finely chopped tomatoes
1 tsp chaat masala or dry mango powder
1 tsp coriander powder
1 tsp garam masala
1/2 tsp turmeric powder
1 tsp lemon juice
1 tsp sugar
salt to taste

METHOD
Peel bitter gourd, take out the seeds and finely chop it. Put around 1 tsp of salt on chopped bitter gourd and keep aside for 30-35 minutes.
Wash bitter gourd with clean water and squeeze out excess water and keep aside.
In a pan, add 1/4 cup oil and put finely chopped potatoes. Saute till golden in color. Transfer potatoes in a bowl and cover it with lid.Keep aside.
In same oil (add more if required) saute bitter gourd till golden and crisp.
Once bitter gourd is golden in color take out the excess oil if any in separate bowl.
Add saute potatoes and finely chopped tomatoes.
Now add salt, garam masala, coriander masala, chaat masala and turmeric powder.
Mix well and cover the pan with lid. Let it cook for 2-3 minutes and sugar and lemon juice, turn off the flame.
Tangy chatpata bitter gourd is ready.
IF BITTER GOURD IS MORE BITTER YOU CAN INCREASE THE QUANTITY OF LEMON JUICE OR SUGAR DEPENDING ON THE TASTE OF YOUR CHILD.
