VEGETABLE CALZONE

INGREDIENTS

OUTER LAYER
2 tsp Yeast
1 tbsp sugar
1/2 tsp salt
3/4 cup warm water
3 cups whole wheat flour or wheat flour

For Filling
1 cup boiled potato
1/2 cup corn
2 chopped onions
2 tomatoes
1/2 cup capsicum
1 tsp oregano
2 tbsp tomato sauce
chilli as per taste
1 cup grated processed cheese or mozzarella cheese
1/2 cup pizza sauce or tomato sauce


 


For outer layer 

 Mix together warm water, yeast, salt and sugar in a bowl.Let it rest for 2-3 minutes till frothy.

In a big mixing bowl add flour and mix in salt.Pour the yeast mixture and start kneading the dough.Add more lukewarm water as required till you get a smooth dough.

Put some oil on the bowl in which the dough was mixed and place the dough in it to rise

This will take around one hour. after one hour punch the dough again and let it rest for another 30-45 minutes 

For the Filling:


In a frying Pan heat oil. Add onions and fry it for a minute

 Mix in chopped Capsicum, sweet corn and saute for a minute.

Mix in the chopped tomatoes & mashed potatoes.

Add red chilly powder,salt and tomato ketchup and saute for 2-3 minutes.

Mix in the oregano.

Mix well and switch off the flame.

Punch down the dough and divide into 6 equal portions

Roll the dough into a round shape, spread 1 tbsp of tomato sauce or pizza sauce  and place the filling of about 2 tbsp and top with the grated cheese and fold over.

Seal the edges .Brush the top of the calzones with the oil. 

Pre-heat oven at 220° C and bake it for 15-20 minute.

1. Mix together 2 tbsp warm water, 2 tsp yeast, 1/2 tsp salt and 1 tbsp sugar.













2. Let it rest for 5-10 minutes or till its frothy.













3. Take 3 cups whole wheat flour.










4. Mix dissolved yeast in it.










5. Knead soft little sticky dough using warm water. Drizzle some oil in pan and cover it and keep it in warm place and let it rise for 1-2 hour.










6. After 1 hour dough will rise (Depending on climate of your city might take 2 hours).










7. After 1 or 2 hour. Punch the dough using good amount of flour to take out air. Again cover dough and let it rest for more 25-30 minutes.

By that time let's make filling:










1. Heat some oil in pan and saute 2 chopped onions till transparent.










2. Add 1/2 cup corn and capsicum. Saute for 2 minutes.










3. Now add 1 cup boiled potato and 2 finely chopped tomatoes.










4. Add 2 tbsp tomato sauce.










5. Add salt per taste and 1 tsp oregano and chilli powder.










6. Remove from fire and add 1 cup grated cheese (processed or mozzarella)










7. After 25 minutes punch dough and make it smooth using some oil.










8. Divide dough in equal portions. (make big rolls).










9. Roll the dough of medium size with rolling pin.










10. Spread pizza or tomato sauce on it (I forgot to do that) and put filling in centre.










11. Seal the edges well using little cold milk or water.










12. Prick them using fork or knife and brush top with oil.










13. Grease baking tray and bake it in 220° C pre-heated oven.










14. Bake it for 15 minutes.










15. After 15 minutes turn it and see it's done.















16. Calzones are ready to serve.
