CARROT PASTA

INGREDIENTS
250 gms Pasta
1 large sized chopped onion
3 medium sized chopped tomatoes
1 large sized chopped carrot
6-7 cloves of garlic
3 tbsp butter
1 tsp oregano
1 tsp sugar
1/4 cup cream/ milk
2 tbsp tomato sauce
2-3 tbsp grated processed cheese
salt to taste
Coriander leaves for garnishing

METHOD
Cook pasta in big pan with lots of water in it. Add 1 heaped tsp of salt.  When cooked drain excess water and keep aside.

Heat butter in a pan, Add onions, garlic and saute for 2 minutes. Add carrot, tomatoes,sugar and salt and mix well. Cover the lid and cook till tomatoes become little soft. Now turn off the gas and let the mixture cool down.


Take out the mixture in blender and make a smooth paste. Put 1 tbsp butter in pan, add oregano and transfer this puree in it and cook this till it leaves the sides of pan. Add cream or milk. Mix well.

Add in pasta and toss well. Add grated cheese and garnish with coriander.

1. Boil water in pan and add spoonful salt.












2. Add in pasta, cook it , drain and keep aside.

8. Puree it like to form a smooth paste.













9. Saute add salt, pepper, sugar and oregano.













10. Add in cooked pasta and saute.













11. Add tomato sauce and little milk or cream mix well.













12. Garnish with cheese and coriander.
