GAJAR HALWA / CARROT HALWA / GAJAR HALWA WITHOUT MILK/ CARROT HALWA WITHOUT MILK/ KHOYA GAJAR HALWA/ MAWA GAJAR HALWA

INGREDIENTS
1 kg carrot
1 to 1 1/2 cup sugar (adjust according to your taste level)
1 cup homemade 5 minute khoya / mawa
1 tsp cardamom powder (elachi powder)
1/2 cup chopped or sliced almonds, cashews

METHOD
Grate carrots and keep on heavy bottomed pan, on medium flame. Once it releases it water turn the flame to high. Let all the water dry up.

By the time, water is drying up, start preparing your homemade khoya / mawa and keep aside.


Once all the water is absorbed add sugar and mix well. Keep the flame on high and keep stirring occasionally. Sugar will release the water. Dry up the water of sugar too.

Once it is completely dry but moist, crumble khoya/mawa and add in halwa.

Take a teaspoon of ghee, warm it add chopped nuts or you can dry roast the nuts. Add in halwa and serve hot.

1. Make 5 minute homemade khoya / mawa.









2. Keep grated carrot on heavy bottomed pan and let water get absorbed.








3. Once water is absorbed add sugar and turn the flame high, stirring occasionally.








4. You will see as sugar melts, it will release water. Let this water dry up completely. This will take 15-20 minutes. Keep the flame high.










5. Once it is dry, add crumbled khoya in it.








6. Roast chopped nuts in ghee.








7. Transfer in halwa.

9. Garnish with chopped nuts and serve hot!
