INGREDIENTS
1 cup quinoa
1 1/2 cup water
1 large finely chopped onion
1 large finely chopped carrot
1/2 cup peas
1/2 cup corn or any vegetable of choice
1/2 tsp turmeric powder (haldi powder)
1 tsp coriander powder
1 tsp cumin seeds (jeera)
1/2 cinnamon stick (dalchini)
1-2 cloves (laung)
salt and chilli to taste
METHOD
Wash quinoa 5-6 times and soak in water for 30 minutes.
In a pan, heat some oil, add cumin seeds, cinnamon stick and cloves, saute for a minute, add chopped onions. Let onion turn golden in colour.
Add all the veggies, salt, red chilli, coriander powder, haldi powder. Give a good mix, add soaked quinoa and water.
Cover with lid and let it simmer on low flame for around 20-25 minutes or till water is completely absorbed.
Garnish with freshly chopped coriander leaves and serve with curd or dal.
IF YOU WANT TO SERVE IT TO TODDLER ADD 1/2 CUP MORE WATER, IT WILL BECOME LIKE KHICHDI.
