INGREDIENTS
250gm crumbled paneer(cottage cheese)
1 large chopped onion
1 large grated or finely chopped tomato
2 tbsp tomato sauce
1 tsp coriander powder
1 tsp turmeric powder (haldi)
1 tsp chaat masala or amchoor powder
1/2 tsp garam masala
1 tbsp ginger-garlic paste
Salt and red chilli powder to taste
Some chopped coriander leaves
8-10 bread slices
Tomato sauce or green chutney for spreading on bread slice
Cheese slice or grated processed cheese (optional)
Softened butter for toasting bread
METHOD
In a pan, heat some oil and saute chopped onions till golden in colour. Add grated or chopped tomato, salt, red chilli, ginger-garlic paste, turmeric powder, chaat masala , coriander powder and tomato sauce. Cover the pan with lid and reduce the flame to low. Cook till masala start leaving the sides of pan and combine together.
Add crumbled paneer in it. Cook on medium flame till water from paneer is completely dry. Add chopped coriander leaves. Remove from flame and let the mixture come down to room temperature.
Take bread slice and trim the edges if it's hard. Spread tomato sauce on both the slices or combination of green chutney and tomato sauce. Keep generous amount of paneer masala on one slice, top it with cheese slice or grated cheese.
Cover with other slice. Spread softened butter on one side, toast on hot pan. Flip the bread, spread soft butter, toast it.
Slice and serve in breakfast or pack in kids school tiffin.
