SUJI / RAWA/ UTTAPAM / SEMOLINA PANCAKE / SEMOLINA VEGETABLE PANCAKE/ SUJI- RAWA VEGETABLE UTTAPAM

INGREDIENTS
1 cup rawa/ suji / semolina
1 cup beaten curd
1/2 to 3/4 cup water  (depending on the thickness of curd)
1 finely chopped onion
1 finely chopped tomato
1 finely chopped capsicum
some fresh chopped and washed coriander leaves
salt to taste
oil for cooking


METHOD
Mix suji,curd and salt well. Add 1/2 cup water. Keep it aside for 10-15 minutes. After 15 minutes the batter will become more dense, add more water little by little to get right consistency. It should not be too thick or too flowing. By that time chop the toppings.

In a bowl, mix together chopped onion, tomato and capsicum. Add salt just before adding on top. If added in advance, can leave water.


Clean tawa well with tissue paper. Take a ladle full of batter and pour it over the hot tawa, keep the flame medium. Drizzle oil all over and flip it, now add chopped veggies and some coriander leaves.

Flip again, keep the flame medium to low. Drizzle some more oil all over, press it hard with the help of spatula so that veggies get stick nicely.

Serve hot with sambhar or peanut chutney or coconut chutney.

Can be packed in kids lunch box or serve in breakfast.

1. Mix together rawa and curd.

5. Mix together chopped veggies. Add salt in it.











6. Clean tawa with tissue paper.











7. Pour ladle full of batter. Don't over spread like dosa,  add veggies and gently press it with your hand or spatula.










8. Add toppings.











9. Sprinkle some coriander leaves. Drizzle some oil all over. Keep the flame high. Flip it.










10. Flip it over again.










11. Press it hard with the help of spatula.















12. Flip and check, if you want it more brown and crisp, cook for more time.













13. Ready to go in kids tiffin :)
